Pumpkin Seeds



Pumpkin seeds have so many great health benefits.  They are rich in omega fatty acids, vitamins and minerals!  Tomorrow we are going to be carving pumpkins and I don't want all those healthy seeds to go to waste so I plan on roasting them.

Sweet Pumpkin Seeds


~ Seeds from 4 Pumpkins (about 2 cups)

~1 Tbsp Olive Oil

~ 1 tsp  Cinnamon

~1 tsp Cloves

~1 tsp Ginger

~1 1/2 Tbsp Brown Sugar


Preheat oven to 250 degrees.  Remove seeds from pumpkins and rinse well.  In a bowl mix seeds with oil, cinnamon, cloves, ginger and brown sugar. Spread unto a cookie sheet.  Bake for an hour, stirring seeds about every 15 minutes. Let cool and enjoy!
