I am all for not letting breast milk go to waste but I can't say that I agree with a chef making his wife's breast milk into cheese for his customers. Apparently the chef and his wife had a surplus of breast milk stored in their freezer and out of curiosity he decided to make it into cheese. When he blogged about it people started asking for it and he began to serve it at his restaurant.
The problem that I have with this story is that there are milk banks everywhere that will gladly accept extra breast milk for babies who otherwise might not be able to have it and could truly use it for growth and health. You can even send your milk to Africa through Breast Milk Project to feed malnourished children so why waste it by serving it to Manhattan restaurant goers?
With all that said I am glad that this story has brought attention to breast feeding and it's wonderful benefits but please let's save it for babies who need it.

I think you're right, although this does great things for bringing awareness to the benefits of breastmilk, it could have been better used for sick babies or those in need of bm. I'm crushed I didn't think of making mine into cheese back in the day :p
Totally agreed. There are many places that will accept donated milk, all you have to do is a second or two google search. Like you said, maybe this will shed some light on the milk shortage.
I agree with you. I find the cheese a bit icky to think about.
