Caprese Salad
At my sister's fabulous suggestion I made this on mother's day when we had our family over. I served it as an appetizer and it was so yummy, fresh and beautiful! I had never made it before so this is what I came up with on the fly. That's how I like to cook anyways. I'm not good at following directions so I rarely post recipes. They usually only make sense in my head but I'm going to try to start writing them down so I can share more because I love to cook!
Caprese Salad
1 pint grape tomatoes
8 oz mozzarella balls
8-10 basil leaves
1 Tbsp balsamic
1 Tbsp olive oil
pinch of salt & pepper
Rinse tomatoes and add whole or slice in half to mozzarella balls which are sliced into 1 inch pieces. Layer basil leaves on top of each other, roll them up like you're rolling a cigarette and slice diagonally. Add to tomatoes and mozzarella. Drizzle with balsamic ( I like Whole Foods 365 Organic Balsamic Vinegar) and olive oil on top then add a pinch of salt and pepper. Toss and let marinate for a half hour to bring out the flavors best or serve immediately. Enjoy!
