Gluten Free Pizza

My sister made gluten free pizza last Friday night at her house and it was so good that I had to make it again on Saturday.  That was Bishop’s first taste of pizza and he loved it!  Even if you aren’t following a gluten free diet you should still try it…seriously.

Pizza Sauce
(makes about a cup)
  • 1 can (8oz) tomato sauce
  • 1 1/2 tsp sugar or honey
  • 1/2 tsp dried oregano leaves
  • 1/2 tsp dried basil leaves
  • 1/2 tsp crushed dried rosemary leaves
  • 1/2 tsp salt
  • 1/4 tsp garlic powder
Pizza Crust
  • 1 Tblsp active dry yeast
  • 2/3 cup brown or white rice flour
  • 1/2 cup tapioca flour
  • 2 tsp xantham gum
  • 1 tsp gelatin powder
  • 1 tsp Italian seasoning
  • 1/2 tsp sugar or honey
  • 1/2 tsp salt
  • 3/4 cup warm milk or milk substitute like soy or rice
  • 1 tsp olive oil
  • 1 tsp apple cider vinegar
~Combine all sauce ingredients in small saucepan.  Bring to boil over medium heat.  Reduce heat to low and simmer for 15 minutes.
~Preheat oven to 400 degrees.  Grease 12 inch pizza pan or baking sheet.
~In medium mixer bowl using regular beaters (not dough hooks) blend yeast, flours, xantham gum, gelatin powder, Italian seasoning, sugar or honey and salt on low speed.  Mix in warm milk, oil and vinegar next. Beat on high for 2 minutes.
~Remove from bowl and place ball of dough on greased pan.  Liberally sprinkle rice flour on dough, then press dough into pan, continuing to srinkle dough with flour to prevent sticking to your hands.  Make edges thicker.
~Bake crust for 10 minutes (very important step). Remove from oven and top with sauce, cheese and what other toppings you like.  Bake for another 20-25 minutes.  (makes approximately 6 slices)

IMG_4177 Okay, so I will admit that it’s not the prettiest pizza in the world but it was delicious!  The cheese got a little crispy when I baked it at 425 so I changed it to 400 on the recipe.
