Back in my waitressing days I used to work at a Mexican restaurant. If you know me well or not even that well then you know that I am obsessed with Mexican food! Needless to say that was not the best environment for me to work in. I had to have gained at least 10 pounds while working there. Guacamole is one of my favorite things to make and if eaten in moderation (keyword: moderation) can have many health benefits from all of it’s omega fatty acids. This is how I learned to make it…
Gather together:
- two avocados
- one small orange or half depending on how juicy you like it
- two cloves of garlic
- a quarter of an onion
- cilantro
- salt
- pepper
- poblano peppers
- one tomato
The first thing that I like to do is squeeze all the juice of my orange into a bowl. I then chop the garlic and onion and add them to the juice. Put a dash of salt and pepper in there and let it marinate.
Next chop your cilantro. You be the judge at how much to add. I love cilantro so I add alot! Finely chop the poblano pepper (I omitted this step because I’m still nursing) and chop your tomato and avocados. I like my guacamole chunky so I chop these into cubes. Add everything to the bowl and add another dash of salt and pepper. Mix together and enjoy!

My little girls both lovvvvvvve guacamole. People always act so surprised, but it was among their very first foods. I really encouraged them to eat avocados for the omega 3s. Yum!
